  • 2 medium yuca (cassava) roots
  • 4 cups vegetable oil (for frying)

Instructions

  1. Peel the tough outer skin of the yuca roots with a sharp knife.
  2. Cut the yuca into thick sticks or wedges, about half an inch wide.
  3. Boil salted water in a large pot and add yuca pieces; simmer for 15-20 minutes until fork-tender.
  4. Drain yuca and let cool on paper towels to remove moisture.
  5. Heat vegetable oil in a deep skillet over medium-high heat. Fry yuca in batches for 5-7 minutes until golden brown.
  6. Remove from oil, sprinkle with salt and pepper, and serve hot with your favorite dipping sauce.
