  • 1 cup tempura batter mix
  • 1 cup ice-cold water
  • 2 cups vegetable oil (canola or peanut)
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup grated daikon radish

Instructions

  1. Prepare your vegetables by washing and slicing them into uniform bite-sized pieces.
  2. In a large bowl, combine the tempura batter mix with ice-cold water until just blended; lumps are fine.
  3. Heat vegetable oil in a deep frying pan to about 350°F (175°C).
  4. Dip each vegetable piece into the batter, allowing excess to drip off, then gently place them in the hot oil.
  5. Fry in batches until golden brown (about 2 minutes). Remove and drain on paper towels.
  6. Serve immediately with soy sauce and grated daikon radish.
