  • 1/4 cup low-sodium soy sauce
  • 2 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 2 tbsp mirin
  • 1/2 cup cornstarch
  • Vegetable oil for frying

Instructions

  1. 1. Marinate the chicken: Cut the chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, ginger, garlic, and mirin. Add chicken and coat well. Cover and marinate for at least 1 hour (overnight is best).
