German Potato Pancakes, also known as Reibekuchen, are a crispy and savory delight that brings the comforting flavors of Germany to your table. These golden-brown pancakes, made from grated potatoes and onions, are perfect for breakfast, lunch, or dinner.   • 4 medium starchy potatoes (about 600g), peeled and grated
  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1/2 cup all-purpose flour (60g)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil (60ml) for frying

Instructions

  1. Grate the potatoes using a box grater or food processor. The finer the grate, the crispier your pancakes.
  2. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, mix drained potatoes with chopped onion, beaten eggs, flour, salt, and pepper until well combined.
  4. Heat oil in a skillet over medium heat until shimmering.
  5. Drop two tablespoons of potato mixture into the skillet for each pancake and flatten slightly with a spatula. Fry until golden brown (about 3-4 minutes) per side.
  6. Transfer cooked pancakes to paper towels to drain excess oil and serve warm.
