  • 1 cup seasoned breadcrumbs (or panko)

  • Vegetable oil for frying (enough for about 2 inches deep)
  • 1/2 cup buttermilk
  • 1 tbsp dried dill
  • 1 tbsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Clean and pat dry the mushrooms.
  2. Set up a breading station: mix flour with salt and pepper in one bowl, beat eggs in another, and place breadcrumbs in a third.
  3. Coat each mushroom in flour, dip in egg, then roll in breadcrumbs.
  4. Heat oil in a deep skillet until shimmering.
  5. Fry mushrooms in batches until golden brown, about three minutes per side.
  6. While frying, whisk together buttermilk, dill, parsley, salt, and pepper for the ranch dip.
  7. Drain excess oil from fried mushrooms on paper towels and serve with ranch dip.
