  • 2 large starchy potatoes (about 400g), peeled and chopped
  • 300g fresh cod fillets, cooked and flaked
  • 1 cup (100g) panko breadcrumbs
  • 1 large egg
  • 1 small onion (50g), finely chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • ½ cup (120g) mayonnaise
  • 1 tbsp lemon juice
  • 2 tbsp dill pickles, finely chopped

Instructions

  1. Boil the chopped potatoes until fork-tender, about 15-20 minutes. Drain and mash once cooled.
  2. Flake the cooked cod fillets into bite-sized pieces.
  3. In a mixing bowl, combine mashed potatoes, flaked cod, onion, panko breadcrumbs, egg, salt, pepper, and parsley. Mix gently to combine.
  4. Form the mixture into small patties about half an inch thick and place on a parchment-lined tray.
  5. Heat oil in a non-stick skillet over medium heat. Fry the patties for 3-4 minutes on each side until golden brown.
  6. For the tartar sauce, mix mayonnaise with lemon juice and dill pickles until well combined.
