Chicken Pakora is a crispy and flavorful Indian snack made with tender chicken pieces coated in a spiced chickpea batter.   • 1 pound boneless, skinless chicken breast (cut into bite-sized pieces)
  • 1 cup chickpea flour (besan)
  • 1/4 cup rice flour
  • 1 tablespoon fresh ginger (grated)
  • 23 fresh green chilies (finely chopped)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Cooking oil for frying

Instructions

  1. Marinate the chicken: In a large bowl, mix chicken pieces with chickpea flour, rice flour, ginger, green chilies, spices, and salt until well-coated. Let it sit for 30 minutes.
  2. Heat the oil: In a deep frying pan, heat about two inches of oil over medium-high heat until it reaches 350°F (175°C).
  3. Fry the pakoras: Carefully drop spoonfuls of the marinated chicken mixture into the hot oil. Fry in batches for about 5-7 minutes until golden brown and crispy.
  4. Drain excess oil: Remove pakoras with a slotted spoon and place them on paper towels to absorb grease.
  5. Serve hot: Arrange on a platter and serve with mint chutney or tamarind sauce.
