  1. Peel and grate the Russet potatoes until you have about four cups.
  2. Rinse the grated potatoes in cold water to remove excess starch, then drain and dry thoroughly using paper towels.
  3. In a mixing bowl, combine dried potato shreds with olive oil, salt, pepper, and onion powder (if using). Toss until evenly coated.
  4. Preheat the air fryer to 375°F (190°C) for five minutes.
