  • 14 oz extra-firm tofu
  • 1/2 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 2 cups dashi stock
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake

Instructions

  1. Drain and press the tofu between paper towels to remove excess moisture. Cut into 1-inch cubes.
  2. Lightly dredge each cube in flour for a crispy coating.
  3. Heat vegetable oil in a deep pan over medium-high heat (about 350°F/175°C).
  4. Fry tofu cubes until golden brown on all sides, approximately 4 minutes. Drain on paper towels.
  5. In a saucepan, combine dashi stock, soy sauce, mirin, and sake; simmer gently.
  6. Serve the fried tofu in shallow bowls and pour warm broth over it. Garnish as desired.
