  • 2 medium Yukon Gold potatoes, diced (about 1.5 cups)
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Wash and peel the potatoes, carrots, and onion; dice them into uniform pieces.
  2. In a large pot over medium heat, melt the butter. Add the diced onion and sauté until translucent (about 5 minutes).
  3. Stir in the chopped carrots and potatoes; cook for an additional 5 minutes.
  4. Pour in the vegetable broth until vegetables are submerged; bring to a boil.
  5. Reduce heat to low and simmer uncovered for about 20 minutes until potatoes are tender.
  6. Blend the mixture until smooth using an immersion blender or regular blender; stir in the heavy cream gently.
  7. Serve hot, garnished with extra fresh dill if desired.
