  • 8 oz spaghetti
  • 3 boneless skinless chicken breasts (about 1 lb)
  • 8 oz burrata cheese
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter (divided)
  • Zest and juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet over medium heat, melt 2 tbsp butter. Season the chicken with salt and pepper, then cook for about 6 minutes on each side until golden and cooked through. Remove from the skillet and let rest before slicing.
  3. In the same skillet, add remaining butter and minced garlic; sauté for about 1 minute until fragrant. Add lemon juice, zest, and reserved pasta water gradually while scraping up any bits from the skillet.
  4. Toss the cooked spaghetti back into the skillet with sliced chicken until well coated in the sauce.
  5. Tear burrata into pieces and scatter over the pasta. Gently mix to allow it to melt slightly.
  6. Serve garnished with chopped parsley and grated Parmesan.
