  • 2 cups roasted butternut squash (about 1 medium squash)
  • 1 cup all-purpose flour, plus extra for dusting
  • 1 large egg
  • 1 tsp salt
  • 1/4 tsp freshly grated nutmeg

Instructions

  1. Preheat oven to 400°F (200°C). Halve the butternut squash, remove seeds, and roast cut-side down on a parchment-lined baking sheet for 30-40 minutes until tender.
  2. Once cooled, scoop out the flesh into a bowl and mash until smooth. Add egg and mix well. Gradually incorporate flour and salt until a soft dough forms.
  3. On a floured surface, divide dough into four portions. Roll each into ropes about 1/2 inch thick and cut into one-inch pieces. Pinch each piece with a fork to create ridges.
  4. Boil salted water in a large pot; add gnocchi and cook until they float—about 2 minutes. Remove with a slotted spoon.
  5. In a skillet, melt butter over medium heat and sauté the gnocchi until golden brown on all sides.
  6. Serve hot with sage brown butter or your choice of sauce.
