  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (about 5 minutes).
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add white beans, vegetable broth, thyme, salt, and pepper; bring to a gentle boil while stirring occasionally.
  4. Reduce heat to simmer and add kale; cook for about 5 minutes until wilted.
  5. For a creamier texture, use an immersion blender to slightly puree the soup while still keeping some chunks.
