Ingredients

  • 1 cup green split peas
  • 6 cups low-sodium vegetable broth
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Dice the onion, carrots, and celery.
  2. In a large pot over medium heat, add olive oil and sauté onion and garlic for 3-4 minutes until fragrant.
  3. Stir in split peas, carrots, celery, vegetable broth, bay leaves, and thyme.
  4. Bring to a boil; then reduce heat and simmer for about 60 minutes until peas are tender.
  5. Remove bay leaves and use an immersion blender to puree until smooth (or leave some chunks).
  6. Serve warm in bowls garnished with fresh herbs or croutons if desired.
