Ingredients

Scale
  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Juice of 1 lime

Instructions

  1. In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  2. Stir in the diced sweet potatoes, cumin, and chili powder; mix well to coat.
  3. Pour in the vegetable broth and bring to a gentle boil. Reduce heat and let it simmer for about 20 minutes until the sweet potatoes are tender.
  4. For a creamy texture, blend the soup using an immersion blender or regular blender until you reach your desired consistency.
  5. Stir in black beans and lime juice just before serving. Warm through for another 5 minutes.
