  • 2 tbsp fresh sage (chopped) or 1 tbsp dried sage
  • 1 medium sweet onion (chopped)
  • ½ cup feta or goat cheese (crumbled)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

  2. If using fresh pumpkin, toss cubes with olive oil, roast for 20 minutes until tender. Skip this step if using canned pumpkin.
  3. Sauté chopped onion in olive oil over medium heat until translucent (about 5 minutes).
  4. In a bowl, whisk eggs with pumpkin, sautéed onions, sage, salt, pepper, and cheese.
  5. Pour mixture into an oven-safe skillet over medium heat; cook until edges begin to set (about 3 minutes).
