  • 8 oz mushrooms (cremini or button), sliced
  • 1 cup pearl barley
  • 6 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in mushrooms and cook for an additional 5 minutes until they release moisture.
  3. Add pearl barley along with thyme and bay leaves; stir well.
  4. Pour in vegetable broth; bring to a gentle boil. Reduce heat to low and simmer covered for 30 minutes until barley is tender.
  5. Remove bay leaves and season with salt and pepper as desired.
