  • 3 lbs bone-in beef short ribs
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine (such as Cabernet Sauvignon)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs generously with salt and pepper. In a large Dutch oven over medium-high heat, sear the ribs until browned on all sides (about 3 minutes per side). Remove and set aside.
  3. In the same pot, add sliced onions and minced garlic; sauté until softened (about 5 minutes).
  4. Pour in the red wine to deglaze, scraping up any browned bits, and reduce by half (about 5 minutes).
  5. Stir in beef broth, tomato paste, thyme, rosemary, and return ribs to the pot. Bring to a simmer.
  6. Cover tightly and braise in the oven for about 3 hours until tender.
  7. Serve with sauce drizzled over the top alongside mashed potatoes or crusty bread.
