  • 3 medium leeks (300g), cleaned and sliced
  • 2 medium zucchinis (250g), chopped
  • 2 medium potatoes (300g), diced
  • 4 cups (950ml) vegetable broth
  • 1 cup (240ml) heavy cream or milk
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and slice the leeks, chop the zucchini, and dice the potatoes.
  2. In a large pot, heat olive oil over medium heat and sauté leeks until soft, about 5 minutes.
  3. Add chopped zucchini and potatoes; cook for another 5 minutes.
  4. Pour in vegetable broth; bring to a boil and then reduce heat to simmer for about 20 minutes until vegetables are tender.
  5. Blend the mixture until smooth using an immersion blender or regular blender.
