  • 1 bag (16 oz) 15 bean mix
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 can (14.5 oz) diced tomatoes, undrained
  • Freshly ground black pepper to taste

Instructions

  1. Rinse the bean mix under cold water. If possible, soak for at least four hours or overnight for tenderness.
  2. Set your Instant Pot to sauté mode. Add a splash of olive oil, then sauté the onions and garlic until translucent (about 5 minutes).
  3. Stir in carrots and celery; cook for an additional 3 minutes.
  4. Add rinsed beans, vegetable broth, diced tomatoes (with juices), bay leaves, thyme, and black pepper. Stir well.
  5. Secure the lid and set to high pressure for 30 minutes. Allow natural release for 10 minutes before venting any remaining steam.
  6. Remove bay leaves and ladle soup into bowls. Garnish with fresh parsley or a dollop of sour cream if desired.
