  • 4 cups vegetable broth

  • 1 tsp ground cumin
  • 1 tsp paprika
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped

  1. In a large pot over medium heat, heat olive oil. Add diced onion and sauté until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute.
  2. Stir in cumin and paprika; cook for another 2 minutes to bloom the spices.
  3. Add canned tomatoes (with juices) and bring to a gentle boil for about 5 minutes.
  4. Incorporate chickpeas and vegetable broth; simmer for 15 minutes to meld flavors.
  5. For a creamy texture, blend part of the soup using an immersion blender or transfer to a blender until smooth.
