  • 2 cups carrots, peeled and chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14 oz) full-fat coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash and carrots with olive oil, salt, pepper, and cinnamon on a baking sheet. Roast for 25-30 minutes until tender.
  2. In a large pot over medium heat, sauté onions and garlic in olive oil until translucent (about 5 minutes).
  3. Add roasted vegetables to the pot with onions and garlic. Pour in vegetable broth and bring everything to a simmer.
