  • 2 medium sweet potatoes (about 400g), peeled and cubed
  • 1 head of cauliflower (about 500g), cut into florets
  • 1 cup quinoa (170g), rinsed
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh herbs (cilantro or parsley) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the cubed sweet potatoes and cauliflower florets in olive oil, cumin, paprika, salt, and pepper until coated. Spread evenly on the prepared baking sheet.
  3. Roast for 25-30 minutes, tossing halfway through until tender and caramelized.
  4. While the veggies roast, combine rinsed quinoa with 2 cups of water or vegetable broth in a saucepan. Bring to a boil, then reduce heat to low and simmer covered for about 15 minutes until liquid is absorbed.
  5. In a large bowl, mix the roasted vegetables with cooked quinoa and garnish with fresh herbs before serving.
