Ingredients

Scale
  • 2 lbs ripe plum tomatoes, diced
  • 1 whole head of garlic
  • 1 cup fresh basil leaves
  • 1 medium yellow onion, chopped
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. While the garlic roasts, chop the onion and dice the tomatoes.
  3. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add tomatoes, salt, and pepper; cook until softened.
  4. Squeeze roasted garlic into the pot and pour in vegetable broth. Simmer for 15 minutes.
  5. Blend the mixture until smooth using an immersion blender.
  6. Stir in fresh basil just before serving. Adjust seasoning if necessary.
