  • 1 cup quinoa
  • 2 cups water
  • 1 cup bell peppers, diced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice, freshly squeezed
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until the water runs clear to remove bitterness.
  2. In a saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed.
  3. While quinoa cooks, chop bell peppers, cucumber, cherry tomatoes, and red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Once quinoa has cooled slightly, combine it with chopped vegetables in a large mixing bowl. Pour dressing over and toss gently.
  6. Sprinkle crumbled feta on top and toss gently again. Serve immediately or refrigerate for later.
