  • 2 medium Yukon Gold potatoes, diced
  • 2 medium carrots, chopped
  • 1 medium yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Once shimmering, sauté diced onions and minced garlic until translucent (about 5 minutes).
  2. Stir in chopped carrots and diced potatoes; cook for another 5 minutes.
  3. Add rinsed lentils and pour in vegetable broth until everything is covered by about an inch.
  4. Mix in bay leaves, cumin, paprika, salt, and pepper. Bring to a gentle boil; then reduce heat to low.
  5. Cover slightly ajar and let simmer for about 30-35 minutes until lentils are tender.
  6. Remove bay leaves and adjust seasoning as needed. For extra creaminess, briefly use an immersion blender before serving.
