  • 2 cups water
  • 1 medium zucchini, diced
  • 1 bell pepper (any color), diced
  • 1 small eggplant, diced
  • 1 small red onion, chopped
  • 4 oz feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse quinoa under cold water. In a pot, combine quinoa with water and bring to a boil. Reduce heat and simmer uncovered for about 15 minutes until all water is absorbed.
  3. Chop the zucchini, bell pepper, eggplant, and onion into bite-sized pieces. Toss them in olive oil with dried herbs, salt, and pepper.
  4. Spread seasoned veggies on the baking sheet in an even layer and roast for 25-30 minutes until golden brown.
  5. In a large bowl, combine cooked quinoa and roasted vegetables while still warm. Crumble feta cheese over the top and gently mix.
  6. Serve warm or chilled, drizzled with additional olive oil if desired.
