Southwestern Black Bean Casserole is a vibrant, flavor-packed dish that brings the essence of the Southwest to your dinner table.   • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups bell peppers, diced (mix of red, yellow, green)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese (cheddar or pepper jack)
  • 1 cup crushed tortilla chips

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, sauté the diced onion and minced garlic until fragrant, about 3 minutes.
  3. In a large bowl, combine black beans, corn, sautéed onion and garlic, bell peppers, and taco seasoning. Mix well.
  4. Layer half of the mixture in the baking dish. Top with crushed tortilla chips and half of the cheese. Add the remaining mixture and finish with the rest of the cheese.
  5. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
