  • 2 cups short-grain sushi rice

  • 2 tbsp toasted sesame seeds
  • 1 ripe avocado, diced (optional)
  • 1/2 cucumber, cut into thin strips (optional)
  • 1 medium carrot, shredded (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions (approximately 20 minutes).
  2. In a bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm cooked rice.
  3. Carefully open each tofu pocket and stuff with seasoned sushi rice using wet hands to prevent sticking. Add optional fillings if desired.
