  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions

  1. Cook the fusilli pasta in salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together fresh lemon juice, olive oil, salt, and pepper until well combined.
  3. Chop the cherry tomatoes and cucumber; slice the red onion.
  4. In a large mixing bowl, combine cooled pasta with tomatoes, cucumber, onion, and dressing. Toss gently to mix.
  5. Add torn basil leaves and toss again.
  6. Chill in the refrigerator for at least 30 minutes before serving.
