  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh lemon juice
  • 2 tsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (about 5 minutes). Add garlic and cook until fragrant (1 minute).
  2. Stir in broccoli florets and cook for an additional 5 minutes.
  3. Pour in vegetable broth and bring to a gentle boil. Reduce heat, cover, and simmer for about 10 minutes until broccoli is tender.
