  • 1 medium eggplant, sliced
  • 2 medium zucchinis, sliced
  • 2 bell peppers (assorted colors), sliced
  • 1 can (15 oz) tomato sauce
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup grated mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the eggplant, zucchini, and bell peppers into thin rounds. Chop the onion and mince the garlic.
  3. In a skillet over medium heat, heat olive oil and sauté onion and garlic until fragrant.
  4. Spread half the tomato sauce in the baking dish. Layer the eggplant, zucchini, and bell peppers over the sauce. Repeat the layers.
  5. Pour the remaining tomato sauce over the vegetables and sprinkle with cheese.
  6. Cover with foil and bake for about 30 minutes; uncover for the last 10 minutes to brown cheese.
