  • 2 cups fresh okra, chopped
  • 1 lb beef or goat meat, cubed
  • 1/2 cup palm oil
  • 1 medium onion, chopped
  • 2 tbsp ground crayfish
  • 3 seasoning cubes
  • 12 tsp ground pepper (or Scotch Bonnet)

Instructions

  1. Wash and chop the okra into bite-sized pieces. Cut the meat into small chunks.
  2. In a large pot over medium heat, combine the cubed meat with water and seasoning cubes. Simmer until tender, about 30-40 minutes.
  3. Add the chopped onions and palm oil; sauté for about 5 minutes until fragrant.
  4. Stir in ground crayfish and pepper, mixing well before allowing flavors to meld for another few minutes.
  5. Gently fold in the chopped okra and cook on low heat for 10-15 minutes to achieve the desired slimy texture.
  6. Taste and adjust seasoning as needed. Serve hot with rice or fufu.
