  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic (minced)
  • ¼ cup fresh parsley or cilantro (chopped)
  • Salt and pepper (to taste)
  • 6 bamboo skewers (soaked in water for 30 minutes)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper.
  2. Add the shrimp and toss gently to coat. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat (around 400°F/200°C).
  4. Thread the marinated shrimp onto soaked skewers (about four to five shrimp per skewer).
  5. Grill each skewer for 2-3 minutes on each side until the shrimp turn pink and opaque.
  6. Serve on a platter garnished with extra herbs or lemon wedges.
