  • 4 cloves garlic (minced)
  • 1 cup bell peppers (mixed colors, sliced)
  • 1 medium zucchini (sliced into half-moons)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup fresh basil (chopped)
  • 1 cup vegetable broth
  • 1/2 cup Parmesan cheese (grated)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve some pasta water before draining.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic for about one minute until fragrant.
  3. Add bell peppers, zucchini, and cherry tomatoes to the skillet. Cook until tender but still crisp.
  4. Combine the drained pasta with sautéed vegetables in the skillet. Pour in vegetable broth and toss gently. Add reserved pasta water if needed for desired consistency.
  5. Season with salt, pepper, chopped basil, and grated Parmesan cheese. Stir well to combine.
  6. Serve on plates or bowls, garnished with extra olive oil and Parmesan cheese.
