  • 2 medium zucchinis (about 250g), sliced
  • 1 large bell pepper (about 150g), diced
  • 1 medium yellow onion (about 150g), chopped
  • 3 cloves garlic, minced
  • 2 cups ripe tomatoes (about 300g), diced or one can (400g) diced tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare all vegetables by washing and chopping them into bite-sized pieces.
  2. In a large skillet over medium heat, warm olive oil. Add onions and sauté until translucent (5 minutes). Stir in minced garlic and cook for another minute.
  3. Add diced eggplant and cook for about 7 minutes until softened.
  4. Stir in zucchini and bell peppers; sauté for another 5 minutes until vegetables are tender yet crisp.
  5. Add tomatoes along with thyme, basil, salt, and pepper. Reduce heat to low and let simmer for about 20 minutes to meld flavors.
  6. Taste and adjust seasoning if needed before serving warm or at room temperature.
