  • 2 medium zucchinis (sliced into ½ inch rounds)
  • 2 bell peppers (mixed colors, sliced)
  • 1 medium red onion (cut into thick rings)
  • 1 cup cherry tomatoes (whole)
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your grill to medium-high heat (400°F/200°C).
  2. Wash and slice the zucchinis and bell peppers; cut the onion into thick rings.
  3. In a large bowl, toss the vegetables with olive oil, salt, and pepper until evenly coated.
  4. Place the seasoned veggies on the grill or in a grilling basket. Grill for about 5-7 minutes per side until tender with char marks.
